Description

The monthly slaughterhouse statistics contain information on slaughter animals (the number of carcasses, their total weight in kilograms and the average carcass weight) and producer prices. The statistics are based on information contained in the Bovine Register and data collected monthly from slaughterhouses using statistical forms.

Data content

The statistics contain data on the production of beef, pork, mutton, poultry, horsemeat and goat meat, including the number of carcasses, their total weight in kilograms and average carcass weights. Producer prices for beef, pork, mutton and poultry are also given. A slaughterhouse’s meat production volume includes slaughter animals that the slaughterhouse has produced itself, animals purchased from other producers, and producer returns. Meat production volumes do not include discarded carcasses or discarded portions of carcasses. The producer price is the average price that slaughterhouses have paid producers. The producer price includes any supplements paid for meat, such as contractual supplements, quality supplements, steak supplements, batch supplements and loading supplements. The producer price does not include VAT or any annual extra payments made by slaughterhouses to producers.

Data collection and sources

Data for the slaughterhouse statistics is collected monthly from slaughterhouses using statistical forms. The majority of businesses in the slaughter industry fall within the scope of Tike’s data collection. Those that fall outside are mainly businesses that carry out small-scale on-farm slaughter. Slaughter volumes for cattle are taken from the Bovine Register.

Update frequency

Statistics are drawn up on a monthly basis.

Preparation and publication schedule

The data for the previous month is available at 9 AM on the last weekday of the following month.

Full-year slaughterhouse statistics are published at the end of February.

Time series

Data is available from the 1950s onwards.
