Description

The statistics contain monthly and annual information on slaughter volumes (number of carcasses and weight in kilos), average carcass weights and producer prices. The statistics are based on data collected monthly from slaughterhouses and on information contained in the Bovine Register. In addition, the annual statistical information is based on data collected from farmers and, for on-farm slaughter, on estimates.

Content

The statistics contain information on the slaughter volumes, weight in kilos and average carcass weights of cattle, pigs, sheep, goats, horses and poultry. Furthermore, the statistics include producer prices for beef, pork, mutton and poultry meat. The volumes include slaughter animals that a slaughterhouse has purchased from producers, animals that a slaughterhouse has produced itself, producer returns and transport slaughter services for producers. The slaughter volumes do not include carcasses discarded during meat inspections nor volumes of discarded meat. In addition, the annual statistical information contains on-farm slaughter of cattle, pigs and sheep.

Data collection and sources

Slaughter data is collected monthly from slaughterhouses. The slaughterhouses within the scope of data collection are slaughterhouses approved by the Finnish Food Safety Authority, Evira, or small-scale slaughterhouses approved by a municipal food authority.  Some small-scale slaughterhouses fall outside the scope. Slaughter volumes for cattle are taken from the Bovine Register.

On-farm slaughter statistics are drawn up using a sample of the data collected for the Farm Survey conducted every other year. On those years when data is not collected from farmers, slaughter volumes are based on estimates.

Update frequency

Statistics are drawn up monthly.

Preparation and publication schedule

Each month’s data is published on the last day of the next month or the following working day. The annual statistics are published on the last day of February or the following working day.

Data is available from the 1950s onwards.
